Balanzoni

Traditionally, Balanzoni, also known as “tortelli matti”, were made with what was left of the Tortellini filling and the ricotta used to make Tortelloni. The filling is a mix of real Bolognese heritage, which Gratifico makes with soft fresh ricotta, 30-month aged Parmigiano Reggiano DOP and delicious artisanally crafted Mortadella. The result is a rich and tasty product, a timeless classic in Bolognese cuisine.

Ingredients

Pasta dough (50%): type “00” soft WHEAT flour, durum WHEAT semolina, EGG 28%, spinach 2%.

Filling (50%): mortadella 42% (pork meat, salt, spices, antioxidant: sodium ascorbate, preservative: sodium nitrite), ricotta (MILK whey, MILK cream, salt), Parmigiano Reggiano DOP 30 months 10.5% (MILK, salt, rennet), breadcrumbs (Type “0” soft WHEAT flour, salt), salt. 

May contain LUPIN, SOYA, MUSTARD and NUTS (WALNUTS).
