We have chosen to have a select quality standard, with the best ingredients of the Emilia-Romagna region.

Parmigiano Reggiano PDO, matured for 30 months, Mortadella di Bologna PGI, barn eggs, the best wheat for our durum semolina and 00 flours, the best herbs and vegetables from the surrounding countryside, showcasing nettle, a traditional medicinal plant.
