Gramigna "straw and hay", Gratifico

This is a type of short pasta typical of traditional Bolognese cooking that has become famous in gastronomy for their particularly curly, playful shape, much loved by children, and for their unmistakeable colour. They are chunky, with a rough surface, ideal to absorb sauces. Italy's Ministry of Agricultural, Food and Forestry Policies has recognised gramigna as Prodotti Agroalimentari Tradizionali, or PAT (traditional Italian food products).
