
Fresh tagliatelle



The tradition of true Bologna tagliatelli is found in its width, 8 millimetres, one twelve thousandth of the height of the Torre degli Asinelli one of the two towers that, with the Torre Garisenda, identifies the heart of the city. Italy's Ministry of Agricultural, Food and Forestry Policies has recognised Bolognesi tagliatelli as Prodotti Agroalimentari Tradizionali, or PAT (traditional Italian food products).

Ortichelle (nettle pasta)



Nettles, derived from the medicinal plants used since antiquity, which already in the time of the ancient Greeks were recognised as having beneficial properties, thanks to their content of selenium, iron, sodium, chromium, copper, sulphur, calcium, zinc, silica, magnesium and phosphorus salts. Nettles are also rich in vitamins A, B1, B2, B3, C, J and K.
