Fresh Pappardelle, Gratifico

Typical and traditional home-made pasta, with a rough surface. Pappardelle are a type of egg pasta that is just the same as tagliatelle but much wider.

In the Veneto region they are called "lasagna", in the general sense of the word - "broad strips of egg pasta".

Italy's Ministry of Agricultural, Food and Forestry Policies has recognised parppadelle as Prodotti Agroalimentari Tradizionali, or PAT (traditional Italian food products).
