The tradition of the true Bologna tortellino, also called the “navel of Venus”, celebrated for its taste and its legends, such as Tassoni's "Secchia Rapita" (stolen bucket).

An inn-keeper, captivated by the beauty of the newly awoken Venus, wanted to reproduce her navel, filling and folding a piece of pasta dough, producing the first tortellino. Italy's Ministry of Agricultural, Food and Forestry Policies has recognised Bolognesi tortellini as Prodotti Agroalimentari Tradizionali, or PAT (traditional Italian food products).

INGREDIENTS

PASTA DOUGH 55%: type ““00” soft WHEAT flour, durum WHEAT semolina, EGG 28%.

FILLING 45%: Mortadella Bologna PGI [pork meat, salt, spices, natural flavourings, antioxidant: sodium ascorbate (E301), preservative: sodium nitrite (E250)] pork meat, raw ham (pork leg, salt, preservative: potassium nitrate (E252), Parmigiano Reggiano PDO matured for 30 months, 14.5% (MILK, salt, rennet), salt, nutmeg. Our eggs are barn eggs

Between 0°C and + 4°C – Packaged in a protective atmosphere.

COOKING INSTRUCTIONS AND ADVICE

Empty the product into simmering stock or salted water, wait for them to rise to the surface and continue to boil for about 1 minute. Serve in stock, or drain and dress to taste.
